  • 2 lb ground chicken
  • 2 eggs
  • 2 roma tomatoes, small dice
  • 1/3 cup chopped shallots
  • 1/4 cup chopped black olives
  • 1/4 cup red bell pepper, finely chopped
  • 1 cup day old bread ripped into small pieces and soaked 1/4 cup milk, then squeeze out excess milk. This helps in keeping a super moist meatloaf.
  • 2 tsp garlic salt
  • 1 tsp oregano
  • 1/4 cup feta cheese

Step :

  1. Preheat oven to 350°F.
  2. In large bowl mix all ingredients together.
  3. Place in loaf pan and bake for 45-60 minutes or until meat is cooked through .
