- 2 lb ground chicken
- 2 eggs
- 2 roma tomatoes, small dice
- 1/3 cup chopped shallots
- 1/4 cup chopped black olives
- 1/4 cup red bell pepper, finely chopped
- 1 cup day old bread ripped into small pieces and soaked 1/4 cup milk, then squeeze out excess milk. This helps in keeping a super moist meatloaf.
- 2 tsp garlic salt
- 1 tsp oregano
- 1/4 cup feta cheese
Step :
- Preheat oven to 350°F.
- In large bowl mix all ingredients together.
- Place in loaf pan and bake for 45-60 minutes or until meat is cooked through .
