Ingredients :

  • 3 cup uncooked pasta (penne works well)
  • 2 cup tomato sauce (spaghetti sauce or marinara)
  • 1/4 cup plain Greek yogurt
  • 1 1/4 cup mozzarella
  • 1 salt and pepper to taste
  • 1 your choice of pizza toppings

Step :

  1. Preheat oven to 350 and grease a 9x9 casserole dish
  2. Cook pasta according to directions. If any toppings need to be cooked (sauteed peppers and onions or sausage crumbles, for example), cook them now as well.
  3. Meanwhile, heat the tomato sauce in a larger sauce pan and stir in the Greek yogurt until warm.
  4. Fold in pasta, 1 c of the mozzarella, and about 3/4 of the toppings.
  5. Pour into casserole dish. Top with remaining cheese and toppings.
  6. Bake for 30-40 minutes until heated through, then turn on the broiler for 2 minutes until the cheese is golden on top. Let cool for 3-5 minutes before serving.
  7. **The toppings are really up to you. I included sauteed green pepper and onion and turkey pepperoni, using one whole pepper and half an onion. Other suggestions might be mushrooms, black olives, bacon, ham, sausage, pineapple, tomato chunks, or anything you like! Be creative!
  8. **If you don't have Greek yogurt, substituting half and half, cream, or milk will work fine. This just makes the sauce smooth and creamy
