How to make healthy christmas brunch easily?
In this recipe you will discover the simplest yet most flavourful way to make the healthy christmas brunch ! Whether you're cooking for a small family dinner or a daytime potluck, follow these easy steps for some excellent bites!
<>Ingredients :
- 1 Onion large size(finely chopped)
- 1/2 cup Beans(finely chopped)
- 1/4 cup Capsicum(mix colour) (finely chopped)
- 5 Eggs
- 1 cup Tomato(finely chopped)
- 3 Green Chilli
- 3 Spring Onion(finely chopped)(keep few green portion of spring onion separate for garnishing)
- 8 Mushroom(chopped)
- Handful Coriander leaves
- as needed Cheese Mozzarella (grated)
- to taste Salt
- 1/4 tsp Red Chilli Powder
- 1/2 tsp Black pepperncorn powder
- 1/4 tsp Mixed herbs
- 2 tsp Oil (to saute the veggies)
Step :
- 1. Take a pan. Add oil. Then add chilli, onion. Saute it. Then add the other veggies and at last add the tomatoes. Create a paste by cooking it in a low flame. Once the tomatoes turns soft. Add salt, red chilli powder and black pepper powder. Mix it well. Then add the grated cheese.
- Then break one egg in a bowl. In the veggies mixture make a space for the egg with a spoon and pour the egg on the same space. Likewise pour all the other eggs on the mixture. At this stage cover the lid and cook on a low flame for 5 mins or until the eggs are cooked to your liking. Here i have cooked it little as my daughter do not love the poached eggs. You can do it as per your choice.
- Once done garnish with the spring onion and the coriander leaves. Serve hot with the bread toast or anything of your choice. You can also add the spices like cumin powder to the veggie mixture.
- But i preferred to keep it simple. It is a healthy dish which you can enjoy in your snacks. Here my family enjoyed this as the wholesome breakfast with some fruits and coffee of individual choice. You can experiment this with difference veggies of your choice to make it healthy and tasty.
